Super crispy Phyllo Pizza whats not too love
So as you can quite imagine I am very very interested in food. (Obviously) So usually when I watch TV it comes down to four channels
Food Network, Cooking Channel, Travel Channel and Netflix. I know Netflix isn’t a channel but you catch my drift. So the other day while watching Bizarre Foods they were exploring the foods of Southern France. In one of the shops he visited he tried a dish, that is apparently served all day long and is hot or cold, consisting of a pizza style bread topped with caramelized onions and olives. And it looked so good I could completely imagine myself being there, sitting with a coffee and having a slice
But, I am miles away from France so I ended up making a version of my own
There is something so addicting about Phyllo Dough. It so flaky and crispy and just completely addicting. Also, I would like to give a shout out to all the grandmas out there that still make this by hand. I have seen people do it a couple times on travel shows and I am always in complete awe. Its so thin, and it requires so much time and skill and its really a labour of love. So Kudos to you
I also saw an episode where a 60 something year old women made handmade pasta in front of a window on a busy street all day long. And not just one type, she was making over 20. Can you imagine the arms on that women after rolling all that pasta all that day long and I don’t know about you but thats the type of workout. Make pasta, eat a little, make pasta, eat a little. Win win right
Another great thing about this is that it resembles having a thin pizza dough but without the process of making a thin crust pizza dough because sometimes you just want to have a pizza without the process of actually making a pizza. Catch my drift?
So what makes this Phyllo pizza so good?
- Delicious sweet caramelized onions
- Super crispy phyllo dough
- Creamy feta cheesy
- Fresh herbs
- Super easy to make
- Ridiculously tasty
And I mean those are just to name a few
So add a little more pizza to your weekdays without spending all night in the kitchen but like I said before, this was gone in about 2 minutes so maybe make some extras for later. Or you know, just calm yourself and eat a little slower we aren’t savages after all
- 5 Sheets Phyllo Dough
- Olive Oil
- 1 large onion, thinly sliced
- 1 tsp. Dried Thyme
- 1 Tsp. Sugar
- 3 Tbl. Black Olives, Quartered
- 4 Tbl. Feta, Crumbled
- 2 Tbl. Butter, Melted
- Spinach
- 1/2 Lemon
- 1 Tbl. Parsley, Minced
- Salt
- Pepper
- Fresh Mint (To Serve)
- Honey (To Serve)
- Place a pan over medium high heat and add the onions with a few tablespoons of olive oil. Sauté, stirring often until starting to soften then turn the heat down to a medium low. Add the sugar and dried thyme and continue to cook until soft and caramelized, about 20 minutes. Season with salt and pepper
- Lay one sheet of phyllo dough onto a bake sheet and brush the top with melted butter. Add another sheet and continue with the butter / phyllo until all 5 layers are done
- Top the phyllo with a layer of spinach leaves, caramelized onions, black olives and feta
- Bake for 20-25 minutes are or until the phyllo is golden brown and cooked through
- Top with parsley and fresh mint and serve with honey on the side if using
