The weather is gloomy, comfort food seems to be all around so I figured something light like this Cous-Cous Tabbouleh salad would be a delicious change up
I am Canadian and we celebrate thanksgiving in October every year, not november, but that doesn’t mean that I don’t celebrate American Thanksgiving each year. It is a great excuse for another turkey dinner. This year we celebrated in bonaire with our two close friends Dirk and Leslie and because we were not on the boat and had some TV we even threw on the Football game, Dallas vs …. hmmm well I cant remember but Dallas won. Is that good? Obviously not a football fan over here. We did not eat in front of the TV though that I have always found strange. Its thanksgiving people take a break from the TV for a couple minutes. And lets face it sometimes it feels like after 5 hours of cooking it only takes 5 minutes to eat.
I decided not to do a whole turkey this time. I had done a huge one last month for Canadian Thanksgiving and really didn’t feel like spending all that time again especially seeing there was only 4 of us so I decided to do some roasted half chickens instead and that way I can still have the bones to make some delicious stock the next day because what is thanksgiving without some turkey soup. The next day I made some stock (of course) but also some chill because the day was so miserable and gloomy outside and well, I just felt like it. But not after a couple days of heavy food I feel like something light and refreshing and I am sure there are a few of you out there that feel the same
If you have ever had a night out and had one too many drinks (Don’t lie I know you have) that feeling you have in the morning of just being depleted of everything good and then you have a mango and you just start to feel good again, thats kinda the effect of this Cous-Cous Tabbouleh Salad. It is full of fresh herbs, vegetables and a welcome break from so much heavy food.

And I would also like to point out the fact that I think that parsley is really quite underused. It is such a great herb, full of health benefits (Don’t believe me just google it) and just adds so much deliciousness to dishes. There really isn’t much you cant just throw a few sprinkles on … or a handful
I hope everyone enjoys there weekend and hopefully there is a little sunshine where you are. It is another rainy day here but gong to make the most out of it and hope the mosquitos don’t get me in the meantime
Does parsley repel mosquitos? Hmm guess I will just have to eat more of this salad and find out for myself

- [br][b]Salad:[/b]
- 1/4 Cup Cous-Cous
- 1 Small Lebanese Cucumber, Cubed
- 2 Small Tomatoes, Quartered
- 2 Tbl. Onion, Diced
- 1 Bunch Parsley Finely Chopped (About 1/2 Cup)
- 3 Radishes, Finely Sliced
- 3 Tbl. Green Onion, Diced
- 4 Balls Labneh
- Fresh Mint
- Salt
- Pepper
- [br][b]Dressing:[/b]
- 2 Tbl. Lime or Lemon Juice
- 1 Tbl. Olive Oil
- Salt
- Start by combining all the dressing ingredients in a bowl. Stir well and season with salt and pepper, set aside
- Cook the cous-cous according to directions
- Once the cous-cous is cooked and slightly cooled, combine it in a large bowl with the cucumber, tomatoes, onion, radish and green onions. Toss with the dressing and season with salt and pepper
- Serve with some fresh labneh balls and top with fresh mint
- Enjoy!
