Hey Everyone!
First off I need to say thank you for whoever sent the Sun because since I sent out my last post asking for someone to send the Sun, it has been beautiful and sunny everyday. So thank you!!!!
Don’t ask me about the weekend coming up though … That is not to be discussed
Well I decided that since my last post I talked about how much Baking I have been doing that the next post had to be something sweet. When I travel I always try to cook with ingredients that I am not able to get at home. Makes sense right. And if you could take a guess about which of these ingredients I am not able to get I think it would be safe to assume you are thinking Figs. Can’t get them and even if they were available the price would be so expensive I wouldn’t dare buy them anyways
But let me tell you, last year I decided to take matters into my own hand and plant a few Fig trees. Not the gigantic ones they are dwarf plants. And for the first little bit everything was going so well. There was over 20 figs between the two plants and although they were growing at a slow rate they were still growing. But then, like so many things before it in Bonaire the Lizards got to them. And no figs for Me 🙁 Since I planted the trees in September there has been about 30 Figs and guess how many I have eaten …. TWO!!!!! And let me tell you both had been slightly eaten by something else but I was too stubborn to not eat them. All this care and work in making sure they are healthy I had to get at least something out of them
Anyways, fast forward / Backwards to Sunday when we were out for a walk and happened to walk past the farmers market and what happened to be there starring at me in the face …. Fresh figs! I mean they are still expensive here but oh what a treat. Some people treat themselves with clothes or shoes and me … food! Hahaha
Well lets start talking about this recipe and all the many reasons in which it is going to blow you away, Besides the fact that it is ready in less than an hour and most of that time is spent in the oven. You can substitute out different fruits because hey, not all of us have access to figs and cooking doesn’t need to be that challenging. You have strawberries, throw them in there. Or as my friend so blatantly told me
“You didn’t use Apples? You should have used Apples.”
Thanks Tips!!! I mean apples are delicious and all but branch out a bit. Be creative. Eat Figs!

And like I said earlier this recipe can easily be swapped out with whatever fruits you have in the fridge and if you don’t have ginger, try adding some cinnamon instead. Again, make it uncomplicated
Well it’s late and one last episode on Netflix is calling my name before falling asleep and enjoying one last day of Sunshine tomorrow till the weekend comes with rain, rain and more rain

- 1 Pear, Diced
- 3 Figs, Diced
- 1 Tbl. Brown Sugar
- 1 Tsp. Ground Ginger
- 2 Tbl. Crushed Walnuts
- Salt, Pinch
- 2 Ounces Goat Cheese
- 1 Sheet Puff Pastry
- 1 Egg, beaten
- Honey Comb
- Honey
- Preheat the oven to 350 degrees Fahrenheit / 177 Degrees Celcius
- While the oven is heating, add the figs and the pears to a pan over medium heat. Add the sugar, ginger, walnuts and salt and cook constantly stirring for 3 minutes or until it is a slightly chunky and thick. You may need to add a little water to keep the mixture from going dry
- Roll the puff pastry out and cut into sections of four. In the middle, top each section with an equal amount of the fig and pear mixture. Brush each side of the pastry with the egg wash and seal into a triangle pressing the edges with a fork
- Bake for 35 minutes or until golden and puffed up
- Serve with drizzled honey, honey comb, and extra walnuts if desired
