Who doesn’t like a fritter am I right? Super crispy on the outside, light and chewy on the outside whats not to love
These were more or less made because after Christmas this year I had way too many brussel sprouts left over because apparently I thought I had an army coming over for dinner. And it seemed every time I opened the fridge they were just starring at me with their judgemental leaves. I really wanted to make something new with them and I had recently seen a recipe for some Indian Onion Bhajis so I thought why not just make them with brussel sprouts. These are much thicker than Bhajis so they kinda just turned into fritters instead but equally delicious
But before we get into that can we just take a minute to talk about the Epic Superbowl Game last night. I am not a football fan by any means. I have probably watched an accumulated 5 hours of football in my life (Not Including Superbowls) but just like most major sporting events or the Olympics I am tuned in. And really its not all just about Football, the commercials the food, the halftime show
So we are sitting their watching it thinking what most people were thinking that there was no way New England was going to come back and Win it and then BOOM out of no where they Win. It was everything you wanted from a sports game. And we ended up having a late night snack of Fried Chicken Sliders because well its the super bowl and a little Gluttony comes with it. It was a great night and am already looking forward to next year
I think fritters are great cause you can really just put whatever vegetable or seasoning in it so its especially great when you are trying to use something up. Case in point these little guys. And having them with these warm indian flavours and serving it with a side of mango chutney is just delicious. They are also:

- Sweet and Savoury
- Warm Spices
- Quick And Easy
- Super Tasty
And if your like me and find that brussel sprouts only really come out on thanksgiving or Christmas time and they seem to get used the same way each time, then this is a great recipe to have
Even if someone says they don’t like brussel sprouts cause lets be honest we all know someone that says they hate them, then let them try this and see if it changes their minds. Even better, don’t even tell them and see if they notice
- Vegetable Oil (For Frying)
- 2 Cups Shredded Brussel Sprouts
- 1/4 Cup thinly sliced onion
- 1/4 Cup Flour
- 1/4 Cup Rice Flour
- 1 Tsp. Baking Powder
- 1 Tsp. Cumin
- 1 Tsp. Curry Powder
- 1 Tsp. Chili Flakes
- 1 Tsp. Turmeric
- Salt
- Pepper
- Mango Chutney (To Serve)
- Combine all ingredients (except Mango Chutney and Vegetable Oil) In a bowl and Season well with Salt and Pepper.
- Add in enough water so that everything holds together in the form of a loose fritter
- Heat 2 inches of oil in a large cast iron pot to 350 degrees Fahrenheit (160 Celsius) and once hot drop fritters into the oil. I got 6 medium size fritters out of it but you can make them bigger or smaller if you like
- Fry for about 4 minutes (2 on each side) or until crispy on the outside and cooked all the way through
- Remove and drain on paper towels and immediately sprinkle lightly with sea salt
- Serve with Mango Chutney
