Get ready to have some Korean Comfort food at its finest
Every cuisine has its cold weather comfort food. That french have the ever so famous Beef Bourguignon, Italians have Pasta Bolognese, Greeks have Moussaka and The Koreans have this, Kimchi Jjigea. It is so delicious and honestly when I visited Korea last year it was the first dish that I had to try.
We were walking through the Markets and looking at all the street food, usually something that we try first, but every restaurant that we went to had these huge grills with pots of this bubbling mixture that looked too good not to try. At the time I did not know what it was so it was one of those point to the dish kinda orders. Clearly I was not disappointed. It was filled with tofu and kimchi and melt in your mouth Pork Belly. I did have vegetarian versions and it was equally delicious. Another reason I find this dish so great is that unlike a lot of other comfort food you don’t feel so full after. It is such a healthy dish and therefore you can eat more … always a Bonus.

The last few days down here in Bonaire have been filled with Rain Rain Rain. Not the type of rain that we get back in Vancouver, it’s warm, but with it brings the Mosquitos. Oh how I hate the pesky mosquitos. They are the worst and they seem to be carrying so many diseases these days it makes them quite scary. Luckily where I am there doesn’t seem to be a lot people getting them so that makes me feel better, makes my mom feel better too.
While the last few days it has been rainy I have been thinking about my friends and family back home and realized I have had this delicious recipe for Kimchi Jjigae, the ultimate Korean Comfort food. Here is why I think you should be making this

Once you cook this is swear you will be hooked and the kitchen will smell so good as well. I have had Kimchi Jjigae with pork belly, vegetarian and also with chunks of tuna and all were equally great. It is such a comforting healthy stew and perfect for those cold rainy nights. And its not like you need to spend hours slaving over this either.

- 1/2 Pound Pork Belly
- 1/2 Onion, Diced
- 4 Cloves Garlic, Minced
- 1 Tbl. Ginger, Diced
- 8 Oz. Firm Tofu
- 1 Large Baking Potato (Cubed
- 1 Cup Old Kimchi
- 1/2 Cup Kimchi Juice
- 3 Cups Chicken or Beef Broth
- 1 Tbl. Gochujang (Korean Hot Pepper Paste)
- 1 Tbl. Gochugaru (Korean Pepper Flakes)
- Soy Sauce (For Seasoning)
- Salt
- Pepper
- Scallions
- Quaill Egg Yolk (Optional)
- Rice (To Serve)
