Simple. Delicious. Ready in 15 minutes. What could be better for a weeknight meal
Sometimes, I want to sit there and cook all day and nothing could be better. Other times, I just want dinner on the table quick but I am not talking about throwing a box of macaroni and cheese on the stove.(Although sometimes that is exactly what I want. KD a Canadian Classic) I am talking about a home cooked pasta that looks and tastes like it took way longer than it does, a roasted pepper and sun-dried tomato pasta
I cant remember where I was or what I was eating but It was earlier this year and it’s like I re-discovered roasted peppers. I had not eaten them or made them in so long and was thinking to myself why. So of course off to the store I went and came back and made a huge batch. They did not last long at all as you could imagine. Salads, Crostini’s, and of course …. Pasta.
The more pasta the better in my opinion. I thought that after going to Sicily for a month I would be sick of pasta but surprisingly I didn’t end up eating too much. There was so much amazing seafood going around although I did have my fair share of Spaghetti Vongole at the beach side restaurants. The perfect dish to sit by the ocean and eat in my opinion
For so many years I had seen recipes for roasted pepper pasta sauce but for some reason had never decided to make it. Craziness. Well that is all changed now. I do admit that I tried it without the sun-dried tomato and have to say I prefer it with them. Just gives the sauce a little more character
Speaking of which I have to take a minute to talk about the most incredible Italian sauce I have ever had in my life. I am not joking about this it was literally a life changer. I went to this restaurant in Sicily called Fiore De Sale and this one dish changed me. It was mussels with a tomato sauce but by no means was that just any tomato sauce. It tasted like it had been stewed with Osso Bucco bones for 8 hours and had such a depth to It I couldn’t believe it was just a tomato sauce with onion, garlic and carrot. I swear I don’t believe him even though I asked him what the ingredients were and he told me that was it.
Anyways, if you are ever in Sicily I recommend going to this restaurant and ordering the mussels it will forever change you. I think that the credit is due to the tomatoes in Sicily they were beyond sweet and amazing. They actually tasted like tomatoes and with the way some of the food we have now is being modified …. Well you know
I think we just all need a little more pasta in our lives don’t you think. No one is unhappy with a bowl of pasta in front of them. Try and tell me one person, I bet you can’t
Roasted Pepper And Sun-dried Tomato Fettuccini
Equipment
- food processor
Ingredients
- 3 Roasted Peppers (Yellow, Orange or Red)
- 1/2 Cup Oil Packed Sun Dried Tomatoes
- 1 Tbl Roasted Garlic w Olive Oil
- 1/4 Cup Parmesan Cheese, Grated
- 1 Pound Fettuccini
- 3 Tbl Basil, roughly chopped plus some for Garnish
- 1 Red Pepper Flakes, To Taste
- 1 Salt
- 1 Pepper, Fresh Cracked
Instructions
- Combine peppers, sundried tomatoes, garlic and parmesan into a food processor. Add enough oil to blend it into a paste. Season with salt and pepper. Feel free to add more roasted garlic if you want a more pronounced garlic flavour
- Meanwhile bring a large pot of salted water to a boil. Cook the pasta according to directions reserving the pasta water
- Add the roasted pepper paste to a pan and add enough of the reserved pasta water to make a sauce. Add the pasta and toss to combine
- Serve topped with chilli flakes, fresh pepper and parmesan. Garnish with fresh basil
