If you dont know by now then let me tell you … Sandwiches are AMAZING, especially for Breakfast
I have this constant struggle when it comes to breakfast, so let me explain a little. I love to cook it, especially for other people and most especially for crowds. But a lot of the time when it comes to me, well, there is a lot of indecisiveness going on. On the side of sweet or savoury, 95% of the time I tend to lean towards Savoury. As much as pancakes and french toast are delightfully tasty it seems as a special occasion thing to me more then a weekly event. And breakfast is kinda a weird thing in a way. Think about it, If you had the same thing for dinner day after day, you would get completely bored, your family might even revolt against you. But breakfast, same thing day after day and its ok. This is probably why some of us get such bad eating patterns in the morning. You don’t have time to make something that seems practical as we are all rushing around so you grab an apple or a yogurt and then wonder why at 10pm you are craving something. This is my theory anyways.
So, what to do? First, try to make something that isn’t too complicated, tasty, and quick because after all who really has the time to spend all morning making breakfast. That is what lazy weekend days are for.
When I got my first restaurant Job downtown in what feels like years ago yet yesterday at the same time, there was a Tim Hortons across the street. If you have never been to Time Hortons, which most likely means you didn’t grow up in Canada, you need to go. It is always one of the first stops to make when coming back home. A double double with TimBits … aka mini donught holes. My favorite, glazed. But starting work at 8:00am, donughts were not exactly on my mind, bagels were. To be precise, everything bagels with cream cheese, a whole one. Clearly not the wisest of breakfast choices but delicious all the same.
Have you ever tried one of those 100 calorie bagel snacks? I have and let me tell you they don’t do it for me. If you love bagels and someone hands you one of those it feels like … well, un-satisfaction. So, what to do. English Muffins, and this is a win in so many ways. First, they are delicious and second, buying whole wheat adds extra fibre and nutrition. (ENGLISH MUFFIN INFO) And have you ever actually felt an english muffin, they weight nothing and are full of tiny air pockets so there is really nothing to feel guilty about.
Back to what makes this sandwich worth your while in the morning.

I am happy to say that in the last two years there has been a zero fast food tolerance for me. And whats even crazier is how hard it seems sometimes. You drive past McDonalds and even though you know it is not healthy or good for you and after you eat it the remorse will set in, there is still a part of you that craves it. For me, the breakfast is what gets me more than anything else. First, who can deny that the breakfast hash browns from McDonalds are not delicious. They are. Just admit it. We have all tried them and we all want more. Second, the breakfast sandwich. This is another reason which brought me to making my own english muffin egg sandwiches at home. You try something that is probably, most likely not good for you (hello blooming onion that comes in at 1000 calories OMG!) and recreate it at home … you know without the 50 grease stained napkins. But, with the idea of the Egg McMuffin in mind along with the need for a healthier alternative to the bagel and some west coast salmon, I think this is a winner.
- 4 English Muffins
- 4 Eggs
- 4 Tbl. Cream Cheese
- 8 Tbl. Smoked Salmon, Coursely Chopped
- 2 Tbl. Chives
- 1/2 Cup. Broccoli Sprouts
- 1/2 Tsp. Dill
- Salt
- Pepper
- Olive Oil
- Preheat the oven to 350 degrees F. Half the English muffins onto a sheet pan and bake in the over for 5 minutes or until warmed and slightly crispy.
- While the english muffins are heating, crack the eggs into a bowl and whisk until smooth and has no lumps. Add the dill, chives and smoked salmon
- Heat a pan over medium high heat and add 1 Tbl. Olive Oil. Once the pan is hot, add the eggs and immediately bring the heat low. Cook the eggs until almost set and remove from heat. Season with salt and pepper. They will continue to cook off the stove
- Remove the english muffins and spread 1 Tbl. Cream Cheese on the top half and place 1/4 egg mixture on the bottom half. Top the egg mixture with 1/4 of the bean sprouts and seal with top half
- Slice and Enjoy
