Seriously, look how delicious and fun these look ….
The other day after cleaning out a very cluttered cupboard I stumbled upon these cute little egg cups that were forgotten for what seems like centuries. In the back, gathering dust wondering when they would ever see the light again. I am thinking that they were purchased at least 4 years ago and they have only been used once. This is one of the reasons why my little cupboards are always overflowing with stuff and little gems like these are forgotten
Do you ever wonder why you like certain things or dislike certain things? Do you ever stop and consider how it might be correlated back to you childhood?
Take for instance … I still love, yes love, having Kraft Dinner Mac and Cheese with hot Dogs and Ketchup. (Recently I learned that the Ketchup thing was Canadian … Who Knew?) There is something about having it that brings me back to my childhood. No, not the fact that it was simpler times. It reminds me of my grandma, my mom, and the fact that we were all together. Now don’t get this message wrong growing up I was not just fed boxed mac and cheese and ketchup.I had homemade meals almost everyday. One of my favourites was when I got home from school and my Grandma would have a fresh fruit plate ready, always with an apple and she would take the peel off, and in the middle would be cottage cheese. Again, it is probably why I love having cottage cheese as a snack so much
It is childhood related … Most Likely
Naturally, another thing that we ate was this dish, Eggs with Soldiers. If you were to just put a piece of toast on a plate and serve it with a soft boiled egg it would be boring, oh geese thanks some dry toast an an egg. But, serve that egg in cute little feet cups and some crispy potatoes dippers and its a whole other story.
Have I told you how much I love eggs. Yes, on many occasions and its because they are oh so delicious. Have you ever been to Thailand and had a crispy Thai fried egg? They literally take a scorching hot pan filled with oil and it is basically like they are deep frying the egg. It’s bubbling and spitting a bit of oil but once it is finished and topped onto a big plate of rice oh wow, there is nothing better especially if you had one too many Chang Beers the night before which seemed to happen on occasion. Speaking of which, have you ever had some rice with a fried egg for breakfast, it’s incredible
Anyways, back to these little gems and why I think you will love this dish so much

And the great thing about these is you can really change up the toppings to suit your needs. You can try adding a roasted cherry tomato, topping it with some grated cheese or even some procuitto wrapped asparagus. I saw that idea on Pintrest the other day and it looked so good and as luck might have it, they had beautiful fresh asparagus at the store yesterday. I haven’t tried it yet but I know it is going to be good
In this recipe I have used large eggs and used a cooking time of 5 Mins for a runny yolk. At 7 Mins you will have a just set yolk so make sure you are paying attention to the cooking times otherwise you won’t have much to dunk into
Go ahead and try these delicious Eggs with Soldiers and at under 15mins of cook time there is no excuse not too
- 4 Eggs
- 4 Homemade croutons
- 1 Small New Potato
- Parsley
- Salt
- Pepper
- Place a medium pot of water over the stove and start to bring to a boil
- While the water is heating, cube the potatoes into 8 small equal cubes and place on a skewer evenly. This will ensure they all brown nicely
- Place a small pan over medium heat and sear the potatoes on all sides until crispy and cooked through. Season with salt and pepper
- Once the water has boiled, gently place the eggs one by one in the pot and cook for 5 mins. Once cooked, place the eggs in a bowl filled with ice and water for 30 seconds to stop th cooking
- Gently remove the tops of the eggs and place a skewer of potatoes in two and the crispy croutons in the remaining two with some sliced parsley
- Serve immediately
