Happy Almost Cinco De Mayo …..
Let me tell you, I love Mexico and even more I love Mexican Food
I have only been to Puerto Vallarta but if you think that I just stayed in some all you an eat resort and I never left the property then you are dead wrong. I eat where the locals eat, and let me tell you I eat hot sauce like the locals eat hot sauce.
It is not like I need an excuse by any means to cook Mexican food but if you are like me then The Day of The Dead Holiday is just another excuse. And like I said last year, an excuse to drink some tequila in the middle of the week. Now, the quesadilla that is being presented here today is not exactly Mexican except for the fact that there are tortillas involved but its delicious. Point made
The last two weeks my boyfriend was away for work and usually when he is gone I tend to eat more vegetarian, and I love it. Its hard to eat mostly vegetarian when you are living with someone who loves meat. Let me tell you, Rob has tried to tell me he would like to go more vegetarian but then I make meals, and they are delicious meals like homemade mushroom ravioli, the response is usually “Where is the meat” Ugh! Did we not just have a discussion about this.
There is sometimes a bad stigma that is involved when someone says they are vegetarian or are trying to eat vegetarian that turns a lot of people off
- Vegetarians constantly saying they are a vegetarian
- Vegetarians criticizing you for eating meat
- Vegetarians only eating salads (myth)
- Vegetarians only eating simple, bland foods (myth)
And I agree, sorta. But honestly, like they say, it only takes a few bad apples to spoil a bunch
So lets just start off fresh and say eating vegetarian doesn’t have to be this weird “Eating-Animals-Is-Cruel-I-Eat-Salads-And-Kale-Everyday” thing.
Also, am I the only one not on the Kale Train?
Last week, specifically Saturday, I was at the local market and one of the vendors came up to me selling sweet potatoes. Well, he asked Rob who then in turn said “Ask her she makes the food decisions.” Smart Man. The problem was in my pantry there was more then enough sweet potatoes. But he mad me such a great deal, five giant sweet potatoes freshly picked (they were still covered in dirt) for $10 eastern caribbean dollars or about $3.00 USD. I was not saying no to that. But then there was the realization that there was so many sweet potatoes, too many. Good thing they have good shelf life. So then came the thought process
Too many sweet potatoes + Vegetarian cooking + Cinco De Mayo Recipe + Something new = Sweet Potato Caprese Quesadilla

Yes, You read that right I did say Quesadilla. Why? Because there are few, if any, quesadilla recipes that I have seen that do not look delicious. How could you go wrong. You have this great vehicle aka the tortilla, you put copious amount of cheese in it, add whatever delicious flavours then add more cheese I mean Helloooooooo!
My boyfriend Rob just brought me back 15 magazines from when he went away because my instructions were literally … “Bring me back every cooking magazine in the airport.” Remember, I live in the Caribbean where they cost about “15.00 USD each. Now, I read this one and there was a note from the editor saying she refuses to use the words “Yummy” “Scrumptious” and don’t even get her started on “Nom.” Well I don’t care … this dish is oh so Yummy!
So dig in and enjoy this delicious vegetarian somewhat Mexican fiesta dish

- 2 Quesadillas
- 3 Sun dried tomatoes in oil, sliced
- 8 Slices Sweet Potatoes, cooked
- 8 Slices Mozzarella
- 6 Slices Tomatoes
- Basil Pesto
- Arugula
- Salt
- Pepper
- Heat a grill pan over medium heat. Once hot, add the sweet potatoes and grill until charred and heated through. Otherwise, just use after cooked
- Take the two quesadillas and spread pesto over each half. Top with remaining ingredients and sprinkle lightly with salt and pepper. Close with other half of tortilla
- Heat a non stick pan over medium heat and fry each side until golden brown and cheese is melted. Cut into thirds and serve

Hmm … Probably not. Would defeat the whole vegetarian aspect of it
